I had never whipped cream before and really had a lot of fun watching it go from liquidy to fluffy and firm. I keep thinking that it will revert to it's liquidy state but nope...it is Sunday and almost two days after I made it and it is still holding firm. This made a very light cake that we both enjoyed. Thanks to Jay for the recipe. 8-)
We also went to Newk's for lunch and I had this GREAT vegetable pizza and Tom had a steak sandwich and then we went shopping for new computers. We were both having trouble with our other laptops so we knew it was time and they made great birthday and father's day gifts. Tom had already gotten me a black diamond necklace but when he mentioned getting new computers it really did seem like a good idea. We were due for some new technology. 8-)
I was pretty beat after trecking all over town looking for the 'right' computer so instead of traveling all the way to Florence to Texas Roadhouse, as we had originally planned for supper, we decided to go to the El Olmeca Mexican restaurant that is just down the road from where we live. This finished the day up quite nicely.
So, suffice it to say that I am completely thankful to have celebrated another birthday. May each of your birthday's be as special to you. Don't take any days for granted...they are all a gift from God. 8-)
